Irish Waters Run

This month we visit the Burren Smokehouse in County Clare and talk with founder Birgitta Hedin Curtin.

[dropcap style=”square”]W[/dropcap]hat made a young woman from Sweden go to Ireland and set up a smokehouse? When you put it like this it seems fairly farfetched, a bit like a time lapse. In fact, it was a slow development. I was studying marine biology in Sweden and went travelling to Ireland. On one of my trips, a dashing gentleman in the now famous O’Connor’s Pub in Doolin asked me if I wanted to join in the conversation with a glass of Guinness. It was one of those ‘sliding doors’ moments.
