Feel-Good Food

Sandyford chef Gareth Naughton shares some of his current favourite dishes from Neighbourhood restaurant.

[dropcap style=”square”]A[/dropcap] sporting injury when he was younger put a halt to Gareth’s Naughton’s dreams of becoming a professional rugby player and prompted him to focus on his other great passion – cooking. Commenting on his roots Gareth said, ‘I’ve always loved food. When I was a teenager, I’d rush home after school every day and watch Ready Steady Cook, and I loved looking through any cookbook I could. After my leaving cert, I wasn’t too sure exactly what I wanted to do but cooking was something I was just drawn towards, and once I found there was a possible career path, I jumped at the chance to do it.

Here’s a selection of the mouth watering recipes featured in this issue to whet your appetite.

  • Marinated Irish Tomatoes, Whipped Buratta and Tomato and Kombu Broth
